This crust can enhance the natural flavor of the filling, and best mate of filling is ice cream.
The snow skin crust has good stretchy, elasticity and softness, which is easy to be shaped in different animal patterns or cartoon patterns, making the product more attractive.
Texture maker-Mochi Dessert Mix
The mixture is the combination of multiple function wheat and tapioca starch in certain ratio. It has great freeze tolerance, slightly sweetness and can keep the mochi texture.

Recipe
1. Water and Maltose syrup together stir well by the mixer, then add Mochi Dessert Mix, mixing evenly without particles.
2. Put in the steamer, until cooked. (about 53 Brix)
3. Mixing with shortening, cool down, then add some flour make it non-stick.
4. As individual preference to add color paste or powder, color dessert is done.
